Pineapple cake

Hello readers, I am back with one more recipe of cake. This time it’s pineapple cake. I made this cake few days ago for my friend. And he loved it. He said he loved how spongy and sweet the bread was. I just love reviews like this. These reviews build up my confidence and inspire me to work hard.





Writing this blog is the hardest thing I am doing in a while because all I want to do is curl up in my blanket and sleep. Hey you can’t blame me it’s too cold outside and it’s raining too. The worst combo, right? All I want to do on these days is drink tea and sleep. Sorry for going little off-track (hehe), let’s talk about cake.

We are going to use fresh pineapple here. We’ll make a pineapple jam. I think it’s high time that we clear one thing. I love making fresh fruit jams for our cakes, I just love it. As usual we will layer our cake, jam and whipped cream. For me pineapple cake is a childhood classic. It’s an OG. At every party we used to have pineapple cake, any special occasion it’s pineapple pastry. So when I was creating my own recipe of pineapple cake it was important to me that when I eat it I feel that nostalgia, all those fun memories.

A lot of people say the best cake I made is pineapple cake. So let’s dive into the recipe



What we need-

· ¼ cup oil

· ¾ cup sugar

· 1 tsp vanilla essence

· 1 tsp pineapple essence

· ½ cup curd

· ½ cup milk

· 1 ¼ cup refined flour

· 2 tsp baking soda

· ¾ cup diced pineapple

· 3 tbsp sugar

How to make it??

1. In a pot add 3 tbsp sugar and pineapple, and let it simmer until cooked and becomes mushy.

2. In a bowl add oil and sugar and cream it.

3. Add vanilla and pineapple essence in it. Then add curd and milk together and mix it well.

4. Add dry ingredients, refined flour and soda. And mix it until no lump remains. But do not overmix it.

5. Pour the batter in a 5-inch cake tin and bake it for 40 mins at 200˚C or until a toothpick comes out clean.

6. Chill your cake and slice it in two halves. Make a whipped cream well around one slice of cake. Add our cooled pineapple jam inside the whipped cream well.



7. Cover the jam with whipped cream and add another slice on the top of it.

8. Cover your entire cake with freshly whipped cream and decorate it.

9. Serve it cool.
