Surprise Strawberry Cupcake

Hello there, I am back with another strawberry recipe as promised and this time it’s cupcakes (yayyyyy). I have a very special place in my heart for cupcakes, you ask why? That’s because they are cute, small, very delicious and easy to make. Everyone loves cupcakes, right? So let’s not delay the process.

I made theses cupcakes with a special trick I learned from a Netflix show “Nadia bakes” so all credit goes to nadia for this awesome technique. But hey hey, recipe is all mine and it’s completely vegetarian and contains no eggs at all. When I made these cupcakes my 3 year old cousin accompanied me and she called then pupcakes, which was too funny. This was definitely not a pupcake but the incident gave me some ideas and soon you can see a pupcake on my blog. Till then let’s work our way towards cupcakes.



So what’s the big surprise I am talking about? We are going to add an entire strawberry in the center of our cupcake. I know right, isn’t this amazing an entire strawberry in our cupcake which will give it a perfect combo of tanginess and sweetness.

How to achieve a strawberry center?

For the perfectly gooey and comforting strawberry center we are going to put a strawberry on our cupcake liner and then add our batter all around the strawberry. And then bake it so that strawberry inside it gets cooked and take a saucy consistency.




Now you know the technique so let's not waste anymore of our time and dive right into the recipe.

Things you need-

· 10 strawberries whole

· 3-4 strawberries sliced (optional for decoration)

· 1 ¼ cup refined flour

· ¾ cup sugar

· ¼ oil

· 1 tsp vanilla extract

· ½ cup curd

· ½ cup milk

· 1 ½ tsp baking powder

· Gold leaf (optional for decoration)

· Mint leaves (optional for decoration)

How to?

1. Mix oil and sugar well. Add curd, milk and vanilla extract in it.

2. When liquids are mixed start adding refined flour and baking powder in it. Mix it until no lump remains.

3. Make sure you don’t over mix.

4. Cut the stems of your strawberries and put them on cupcake liners in a baking tray as shown in pictures above.

5. Add the batter around the strawberries and bake them for 30 mins at 200˚C.

6. When cupcakes are baked, cool them and decorate.

Voilla your tasty, gooey, sour and sweet cupcakes are ready. Share them with your loved ones or eat them all alone. One thing I am sure of is you’ll not be disappointed.
