Hello and happy new year to everyone who are reading this post. This is my first post so kinda nervous but soon I am planning to post about my baking, travel and maybe lifestyle. I’ll post a blog daily as a part of deal I have with my boyfriend where he’ll buy me my own domain if I’ll post regularly for next 50 days. So keep your eye out for new blogs. So let’s move on to the food part without wasting our time. In India it’s a strawberry season and we love our strawberries. That’s why here’s me trying my best to make out of this strawberry season. Bear with me if I post way too many strawberry recipes because recently I bought them in bulk.

What’s a shortcake?
Now, a lot of people asked me the difference between a cake and a shortcake. Surprise shortcake is not a cake which looks short in size. It’s a simple differentiation, in a cake you use oil or butter as base while in a shortcake you use shortening. When we talk about texture a shortcake has a crumbly texture instead of springy. It has a little bit dense texture compared to a cake. But believe me it’s worth the hype.
Let’s talk about the cake
I wanted to make this cake since I was a kid. I used to watch the show strawberry shortcake all day long and that’s why this was on the top of my list of the things I want to bake for my blog.
Here we baked a layered strawberry shortcake with homemade strawberry jam sandwiched between two layers of vanilla shortcake, covered with freshly whipped cream and topped with fresh strawberries. Doesn’t this all sounds very posh and Michelin star. But don’t you worry this recipe is genuinely simple to make. Just follow my lead.
To make the jam you just need sugar and strawberries, yes that’s it.

Let’s get started with the recipe.
Things you need-
For jam
· 6-7 strawberries
· 2-3 tbsp. sugar
For shortcake
· ¼ cup shortening
· ¾ cup sugar
· 1 tsp vanilla extract
· ½ cup curd
· ¼ cup milk
· 1 ½ cups refined flour
· 2 tsp baking soda
· Pinch of salt.
How to make it??
For jam
1. Add strawberries and sugar in a pot and cook it until it starts boiling.
2. Then cool it for a while.
For cake
1. In a bowl cream your shortening and sugar well, then add vanilla, curd and milk in it and combine.
2. When liquids are mixed well, add refined flour and baking powder.
3. Add a pinch of salt and mix it well and make sure that the batter is smooth.
4. At last bake your cake for 35-40 mins or until a toothpick comes out clean in a 5 inch pan at 200˚ C.

Assembly of cake
1. To assemble your cake, cut the vanilla shortcake in two equal halves.
2. Then make a well with a help of whipping cream on the one half of the cake and add your strawberry jam in that well.

3. Add a thick layer of cream over strawberry jam, level it and cover it with another half.
4. Cover your entire cake with fresh whipped cream and top it off with fresh strawberries.
5. Now serve it cool or just cut a biggest slice of cake and enjoy it by your own.

Somethings to keep in mind while baking
Do not over mix your batter otherwise you will kill the air bubbles.
Make sure that all the ingredients are at room temperature.
Sift your refined flour and baking soda before adding to wet ingredients.
